Apple Bread Pudding

2 apples, cored and chopped
Juice of 1 lemon
1/2 C raisins
1/4 tsp cinnamon
4 cups whole wheat bread, cubed
2 cups milk
1 large egg
1/4 cup brown sugar

Mix apples with lemon juice, raisins, and cinnamon. Add cubed bread and place in a greased pan. Mix together milk, egg, and brown sugar. Pour over bread ans let stand 15 minutes. Sprinkle with additional cinnamon.

Cover and bake at 350 F for 45 minutes.
OR steam in pressure cooker with no weight for 45 minutes.

Serves 4.
