Banana nut salad

I’ll be the first to admit: I have not tried this recipe. It sounds pretty weird, but I’m thinking it will be useful when I’m in the middle of the Pacific ocean, and I have too many bananas.

Dressing
1/2 C sugar
1 egg yolk, lightly beaten
3 T white vinegar
1/2 C Miracle Whip (not mayo)

6 medium bananas, sliced
1/2 C chopped salted peanuts

In small, heavy saucepan, combine sugar, egg yolk, vinegar. Warm over low heat, stirring constantly, until sugar dissolves and mixture thickens. Remove from heat and stir in Miracle Whip.
Combine bananas and peanuts in large bowl. Spoon dressing over and stir to combine. Top with additional peanuts.
Best eaten within a couple of hours.
