BROCCOLI CROWN (AKA SPINACH CROWN)

2 pkgs broccoli (or substitute spinach)
1 small onion, chopped
1/2 stick (1/4 C) butter
1/4 C flour
1 tsp seasoned salt
1 C milk
3 eggs
1/2 C mayonnaise
1/4 C parsley

1. Cook veggies, drain well.

2. Saute onion in butter in a saucepan, stir in flour and seasoned salt, and
then cook, stirring constantly, until bubbly. Stir in milk, continue to cook
until it thickens and bubbles 3 minutes.

3. Beat eggs, mix with 1/2 C of the sauce before stirring it back into the
hot sauce. Cook, stirring constantly, until it thickens again, then remove
from the heat and add the mayo and parsley.

4. Fold this mixture into the veggies; spoon into a ring mold, and bake for
30 minutes at 350 degrees.
