Cajun Seasoning (for Blackened Chicken or Fish)

Version 1:
3 T paprika
1 T onion powder
1 T garlic powder
1 T cayenne
1 T thyme
2 t black pepper
2 t white pepper
1 1/2 t oregano or rosemary
(May not be hot enuff)

Version 2:
1/2 t onion powder
1/2 t garlic salt
1/2 t cayenne
1/2 t basil
1/4 t white pepper
1/4 t thyme
1/4 t black pepper
1/8 t sage
1/4 C butter
Use to blacken 1 lb fish.

Version 3 (because we never buy onion or garlic powder):
3 T paprika
3 T chili powder
1 T cayenne
1 T oregano
1 T basil
1 t thyme
1/2 t cinnamon
2 t black pepper
2 t white pepper
To get garlic flavor, rub garlic paste on the meat before rolling it in spice.
