<p>1 c fresh cranberries<br />
1 large eating apple, peeled and cored and chunked<br />
1/2 med. orange, with rind, quartered, seeds removed<br />
1/4 lemon, with rind, seeds removed<br />
1/4 c raisins<br />
2 T whole almonds, walnuts, or pecans<br />
1/2 c sugar<br />
Using the pulse setting, process fruit and nuts in food processor until uniformly chopped. Do not overprocess. Add sugar to taste. (makes approx. 2 cups; good idea to double)</p>
<p>Also works well in jello.</p>

<p>1-1/2 lbs ground beef<br />
2 t minced parsley<br />
1-1/2 t salt<br />
1 can tomato paste<br />
1 lb lasagne noodles<br />
1 lb cottage cheese<br />
1/4 C parmesan cheese<br />
1 small onion, chopped<br />
1 garlic clove, minced<br />
1/2 t pepper<br />
2-1/2 C water<br />
1 egg<br />
1 lb American cheese, grated</p>
<p>Saute beef, onion, parsley, and garlic. Add salt, pepper, tomato paste, and water. Simmer 30 min.</p>
<p>Cook lasagne in 4 qts of boilin salted water for 15 minutes or until tender. Stir gently and drain. Mix egg and cottage Cheese. Alternate layers of sauce, cottage cheese, noodles, and American cheese in baking dish. Top with Parmesan cheese. Bake at 350 for 20 minutes.<br />
6 to 8 servings.</p>

<p>Heat oven to 250. Melt butter in a large roasting pan in the oven. Stir in seasonings. Gradually stir in rest of ingredients until evenly coated. Bake for 1 hour, stirring every 15 minutes.</p>
<p>My Mom always made this at Christmas. The Cheerios are my favorite part &#8212; they seem to soak up the flavor more than the Chex (TM) cereal, and they&#8217;re usually cheaper.</p>
<p>My Mom always packed it away in a huge plastic container to keep it fresh, but Barry&#8217;s Grandma had a better idea. She saves the cereal bags/boxes and puts it back in them, after it&#8217;s made. It&#8217;s fun to open a box of Cheerios and discover it&#8217;s really snack mix!</p>

<p>10 oz pkg frozen chopped spinach<br />
2 C cottage cheese (or 15 oz ricotta)<br />
2 C shredded mozzarella cheese, divided<br />
(potatoes)<br />
(layer tomatoes)<br />
1 egg<br />
3/4 T oregano<br />
(mushrooms)<br />
1/8 t pepper<br />
32 oz jar spaghetti sauce<br />
(onion)<br />
8 oz lasagna noodles, uncooked</p>
<p>Thaw and drain spinach.<br />
In a large bowl, mix cottage cheese, 1 C mozzarella, spinach, egg, oregano, and pepper.<br />
In greased 9 x 13 pan, layer 1/2 C sauce, 1/3 of noodles, 1/2 of cheese-spinach mixture. Repeat; top with remaining noodles, then remaining sauce; sprinkle with remaining cup of cheese.<br />
Pour water around edges.<br />
Cover tightly with foil;<br />
Bake 350 for 1 hour 15 min. Let stand 15 min before serving.<br />
Serves 10.</p>

1 6-0z pkg semi-sweet chocolate bits</p>
<p>Preheat oven to 375 degrees. Beat egg whites until peaks form. Add sugar and continue beating until very stiff. Fold in chocolate bits and nuts. Drop by level teaspoonfuls onto greased cookie sheets. Place in oven and turn off heat. Let remain in oven until cookies cool to room temperature. (May be left in oven overnight and removed in the morning) Store in airtight container. Yields 2 to 2-1/2 dozen.</p>

			<content:encoded><![CDATA[<p>From Stevie&#8217;s collection &#8212; a stained index card probably typed by Mom. There&#8217;s a certain familiar character to things typed on the old manual family typewriter as I was growing up.</p>
<p>1/2 lb ground beef<br />
1/2 onion, chopped<br />
3/4 green pepper, chopped<br />
1 T butter or oleo<br />
1/2 t salt<br />
1/2 can pizza sauce<br />
1/4 t pepper<br />
1/2 can tomato soup<br />
1 C cooked macaroni or fine noodles<br />
1 small can mushrooms and pieces</p>
<p>Melt fat &#8212; brown onion &#038; pepper, add ground meat. Cook until meat is done, add seasonings and other ingredients. Mix together and bake approximately 50 minutes at 350 degrees F, or let simmer over low flame 30 minutes.</p>

<p>1 10-3/4 oz can cream of mushroom soup<br />
1/2 C milk<br />
1 t soy sauce<br />
Dash pepper<br />
4 C cooked cut green beans<br />
1-1/3 C french-fried onion snacks</p>
<p>In 1-1/2 quart casserole, mix soup, milk, soy, pepper, beans and 2/3 C of the onions.<br />
Bake at 350 F for 25 min or until hot.<br />
Stir. Sprinkle with remaining 2/3 C onions and bake 5 minutes or until onions are golden.<br />
Makes 6 servings.</p>

			<content:encoded><![CDATA[<p>I just realized that although I have done <a href="http://www.mepsnbarry.com/adventures/2010/03/12-meatloaves-walk-into-a-bar/">serious journalistic research</a> into the subject of meatloaf, I did not have a single meatloaf recipe on the Foodie Gazette. I will rectify that oversight with the following recipe, found in my brother Stevie&#8217;s collection. I believe from the handwriting that the recipe came from his ex-wife, but there do not seem to be any murderous ingredients in it.</p>
<p>1 egg, beaten<br />
1/3 C milk<br />
1 t salt<br />
1/8 t pepper<br />
1-1/2 C bread crumbs<br />
1/3 C chopped onion<br />
1/3 C shredded raw carrot<br />
3/4 C shredded cheddar cheese<br />
1 lb ground beef</p>
<p>Topping:<br />
1/4 C brown sugar<br />
1/4 C ketchup<br />
1 T mustard</p>
<p>Mix all ingredients. Bake at 350 F for 1-1/4 hours. Combine brown sugar, ketchup, and mustard and spread over loaf for last 15 minutes.</p>

<p>1/2 C milk<br />
1/2 C all-purpose flour<br />
1/2 t baking soda<br />
3 eggs<br />
1 t sugar<br />
dash salt<br />
3 T butter<br />
1/4 C sugar<br />
1 t cinnamon<br />
2 apples, peeled, cored, and sliced<br />
1/3 C currants or dried cherries<br />
1/3 C chopped walnuts or almonds</p>
<p>1/4 C sugar mixed with 1 t cinnamon<br />
2 T butter<br />
whipped cream</p>
<p>In a small mixing bowl, mix the milk, flour, baking soda, eggs, 1 t sugar, and salt together until smooth; set aside. In a heated oven, melt butter in the bottom of a 9-inch skillet with an oven proof handle. Mix in 1/4 C sugar and cinnamon. Saute apples, currants, and walnuts in butter until soft, but not mushy. Pour batter over the apples.</p>
<p>Bake in a 400 degree oven for 10 minutes. Remove from oven, top with cinnamon-sugar mixture and dot with butter. Return the pan to the oven for 15 minutes. Serve immediately, topped with whipped cream.</p>
<p><strong>Variation:</strong> Instead of apples, currants, and walnuts, use 2 pears, peeled, cored and sliced, plus 1 C frozen or fresh cranberries. Add 2 T of Grand Marnier before you finish sauteeing.</p>
<p>If you don&#8217;t have an oven-proof skillet, you can cook the fruit in a skillet and then transfer it to a pie plate, a baking dish, or 4 individual ramekins.</p>

<p>1. Make small meatballs.<br />
Use 1 lb lean ground beef.<br />

Bread crumbs for consistency<br />
Bake 15 minutes at 350 degrees, and set aside for later</p>
<p>2. Arrange a bed of plan white rice 1 inch thick in casserole:</p>
<p>3. Ingredients for Sauce<br />
Large jar plain spaghetti sauce<br />
Large can Progresso black beans, drained and rinsed<br />
1 C green olives<br />
1 C raisins (plumped in microwave 2-4 minutes in 4 T of water)<br />
1 T of Prudhomme&#8217;s Cajun magic, or something very similar for very spicy</p>
<p>4. Arrange sauce on rice, place meatballs around sides of casserole dish<br />
Bake 45 minutes at 250 degrees</p>
<p>Serves around 4 people. I quadrupled this for a party.</p>
