4 1/2 C granulated sugar<br />
1 C sieved cornstarch<br />
2 t ground cinnamon<br />
1/2 t nutmeg<br />
1 t salt<br />
3 T lemon juice<br />
Peeled and slice apples: enough to fill 7 quart jars<br />
1. Make syrup: Put water in a large heavy pot and stir in sugar, cornstarch, cinnamon, nutmeg, and salt. Bring to a boil, stirring constantly, and continued boiling until syrup is thick and bubbling. Add lemon juice.<br />
2. Fill mason jars with sliced apples. Cover with syrup. Seal and process in boiling water bath for 20 minutes.</p>

<p>Combine all ingredients and store in container with tight-fitting lid. Makes 3 cups mix, yielding 24 servings of prepared pudding.</p>
<p>To make pudding, stir mix well. Combine ingredients, using the following amounts, in a small saucepan. Heat over medium heat, stirring constantly, until mixture comes to a boil. Simmer gently, stirring, for a minute. Pour into serving dishes and serve warm or chilled. Optional: Garnish with whipped cream and a sprinkle of dark cocoa powder.</p>
<p>Two servings: 1/4 C mix, 2 T butter (1/4 stick), 1 C milk<br />
Four servings: 1/2 C mix, 4 T butter (1/2 stick), 2 C milk<br />
Six servings: 3/4 C mix, 6 T butter (3/4 stick), 3 C milk<br />

<p>You can play around with this and add other dried fruit (pineapple, apricots, cranberries), sunflower or pumpkin seeds, banana chips, or candy (think jelly beans, Gummy Bears, or Sour Patch Kids).</p>
