CAYENNE WAFERS

Makes about 56 wafers
1/2 C unsalted butter, softened
1-1/4 C grated sharp cheddar cheese
1/2 t cayenne pepper
1/2 t baking powder
1/2 t salt
2 C all-purpose flour
3-4 T water
In a food processor or mixer, combine butter, cheddar, and cayenne until fairly smooth.
Add baking powder, salt, and flour, mixing well. Add the water and continue mixing until the dough holds together.
Divide the dough in half and shape into 2 logs about 7 inches long and 1 inch in diameter. Wrap in plastic wrap and refrigerate for a couple of hours.
Trim a thin slice off the end of the logs, then cut into 1/4 inch slices. Place on ungreased baking sheets and bake in a preheated 400-degree oven for 10 minutes. Cool on racks.
