Chicken with Lemon and Herbs

From the Silver Palette Cookbook

1 C chopped herbs – mint, dill, parsley
2 cloves of garlic, minced
6 boned chicken breasts
2 lemons
4 T butter

Preheat oven to 350 F. Mix herbs in a bowl with garlic. Flatten chicken slightly with your hand and arrange each piece in a separate piece of foil. Sprinkle with salt and pepper and spread with one-sixth of the herbs. Arrange a slice of lemon on each one and dot with butter. Set on a baking sheet and bake for 30 minutes.
