1 bag of thick, crinkle-cut sweet potato chips
1 small bag chocolate chips
1 T shortening or coconut oil
1/2 C finely chopped nuts (almonds, walnuts, or pistachios)
In a small double-boiler, melt the chocolate chips with the shortening or oil until smooth. Dip each potato chip about halfway, then sprinkle it with the chopped nuts. Set on waxed paper or a Silpat mat to harden.
