Coconut Cake Filling

This is a bit too much of a rich thing for one cake; try a smaller recipe?

2 C sour cream
1 t vanilla
5 C shredded coconut
1 C confectioner’s sugar

Mix and spread between and on top of cake layers; leave sides unfrosted.
