Easy Hazelnut Sandwich Cookies

There’s a great story here…

Our neighbor, Barbara Cowan, gave us some of these for Christmas. We already had dozens of homemade cookies, from oatmeal scotchies and Tollhouse cookies to molasses sandwich cookies and rum balls. But Barbara’s cookies were so wonderful that everyone in the family who ate one raved about the taste and the texture. Three of us asked Barry’s Mom to get Barbara’s recipe.

The next day, she asked Barbara for the recipe, telling her how much we loved them. Barbara started laughing — the recipe, from her daughter, is so simple, she was almost embarrassed to admit it!

Buy a tube of refrigerated sugar cookie dough. Slice it, lay the cookies on a cookie sheet, and press chopped hazelnuts into each cookie. Bake according to the package directions.

After the cookies have cooled, spread half of them with apricot jam and stick two together to form sandwiches. Then melt a bag of semi-sweet chocolate chips and dip each sandwich halfway into the chocolate. Set on wax paper to harden.

Note: I forgot to pick up hazelnuts, so I made these without the nuts. They were just fine. You could also try chopped pecans, walnuts, or macadamia nuts.
