Eggless Gingerbread

An eggless cake recipe for ginger-lovers.

1/2 C melted shortening
1/2 C sugar
1/2 C molasses
2 C flour
1/2 t salt
1 t baking soda
1 t ginger
1 t cinnamon
1/4 t cloves
1 C hot water

Cream shortening, sugar, and molasses. Combine dry ingredients and add alternately with the hot water, beating until smooth. Bake in greased 8x8x2-inch pan at 350 F for about 40 minutes. Serve warm with ice cream or whipped cream.
