Gluten-free coconut-chocolate macaroons

I haven’t tried this recipe yet, but it sounds delicious. In addition to being tasty, a couple of these cookies can be helpful in controlling diarrhea caused by IBS or Crohn’s disease.

6 T sweet rice flout
1/4 t salt
4 egg whites
1 t almond or vanilla extract
14-oz package shredded coconut
1/3 C chocolate chips

Preheat oven to 325 F. Blend ingredients in a medium bowl and drop by spoonfuls onto a lightly greased cookie sheet. Bake about 15 minutes, until lightly browned.
