Green Beans with Crushed Garlic

A Vietnamese side dish.

1 T vegetable oil
1 onion, finely diced
4 cloves garlic, chopped
3 large green chilis, seeded and sliced
1 t ground coriander
1/2 t ground cumin
2 large ripe tomatoes, skinned, seeded, and diced
1 lb green beans, trimmed and halved
1/2 t sugar
Pinch salt
2 T fresh cilantro, chopped

Heat the oil in a wok and stir-fry the onion, garlic, and green chilis for a couple of minutes. Add coriander and cumin, stir well, and add the tomatoes and beans. Stir together and cover the wok for 5 minutes. Remove cover, stir in sugar and salt, and cook for another minute or two. Stir in the cilantro and remove to a serving dish.
