HOMEMADE HONEYDEWS (DONUTS)

2 eggs, beaten
1 T molasses
3 C flour, sifted
1 t baking soda
Dash cinnamon, nutmeg
1 C milk
4 C oil
Honey or sugar (for dipping)

Combine eggs and molasses in large bowl. Sift in flour, baking soda, and spices. Drizzle in milk while mixing constantly, until batter looks smooth but still peaks, stands, and clings to your uplifted spoon. Heat oil in large, deep pot to 375 F. (if you don’t have a thermometer, test by dropping a tiny chunk of dough into the pot. If it’s ready, the dough will sink, rise quickly, then scoot around the surface in a froth of bubbles)

To make fritters, simply drop dough by the tablespoonful onto the oil. To make donuts, chill the dough slightly, and roll to a 1/2 inch thickness on a lightly floured board. Cut donuts with a donut cutter. Fry in hot oil until golden (2-3 minutes), turning gently with tongs. Remove, drain, and roll in honey and sugar while still warm.
