Linda’s Cuban-Style Pork

(Note from Meps: As of this writing, in May 2006, I’ve heard that people who live in Cuba are not allowed to eat beef. They raise cattle and serve the beef to tourists, but Cubans are heavily fined if caught eating it. Their diet consists of beans, potatoes, rice, and a little pork and chicken.)

5 lb pork roast
large can stewed tomatoes
med onion
4-5 cloves garlic
hot sauce to taste

Brown roast, add stewed tomatoes (should come close to covering the roast), onions, garlic and maybe 3-4 Tbs of hot sauce. Simmer for several hours on stove top, until meat is tender. I turn the roast over a couple times. I use Grace crushed pepper sauce, but any red hot sauce should work.

    FYI, traditional Cuban food does not include anything spicy. Any hot sauce is an American (or Mexican) twist. Also, beans potatoes, rice, pork, and chicken are some of many foods people consume in Cuba.
