Mashed Sweet Potato Casserole
Just had this for Thanksgiving 2004. Wow! Very sweet, with a crunchy, decadent topping. Everybody had seconds. (Thanks, Julie Miller!)
3 C sweet potatoes, drained (40 oz can or 2 29 oz cans)
Heat and mash them.
Add 1/2 C soft butter
2 eggs
1/2 C sugar
1/3 C milk
1 T vanilla
Put mixture in a 1-1/2 quart casserole.
Mix together:
3/4 C brown sugar
1/2 C flour
1/3 C butter
Sprinkle on top of sweet potato mixture.
Bake 25 minutes at 350.
