NOODLES, METSOVE STYLE

(Hylopites Metsovou)
1 lb 2 oz egg noodles
4-5 diced tomatoes
9 oz bacon
2 chopped onions
2 cloves garlic
3 1/2 oz olive oil
salt & pepper
Grated kefalotyri or parmesan
Cut bacon into large pieces and add olive oil. Add onion and garlic and saute 10 minutes over med. heat. Add tomatoes, salt, pepper, and some water or beef broth. Add noodles (1 part to 3 parts liquid) and cook about 25 minutes over med. heat. Sprinkle with cheese.
