Pao de Queijo (Brazilian cheese bread)

Pão de Queijo — pronounced pow duh KAY-zhoo

1 2/3 C tapioca flour (available at Asian food stores)
4 T sunflower oil
generous pinch of salt
1 egg, beaten
6 T yogurt
1/2 C grated hard cheese, like parmesan

Preheat oven to 450 F. Combine oil and salt with 6 T water and bring to a boil. Pour over the tapioca and stir to make a stiff dough. When it cools, stir in the egg, yogurt, and cheese. Form into small balls (makes about 12) and place on an ungreased cookie sheet. Turn the oven down to 350 and bake 25 to 30 minutes. Cool on a wire rack.
