Peppermint Liqueur

1 C water
2 C granulated sugar
1 t peppermint extract
1 1/2 C brandy
Green food coloring
In a saucepan, combine water and sugar and stir gently. Heat over med-low heat until sugar dissolves. Cool.
Stir in peppermint, brandy, and food coloring (if desired). Pour into a clean, dry decanter or bottle.
Seal and shake. Store in a cool, dark place–allow to mellow 7 days before using.
