QUICK AND EASY FISH DINNER

Whenever I get fresh fish, I always struggle with what to do with it. Poach, pan-fry, bake? This solution sounds wonderful and easy.

Heat a can of coconut milk with some Asian sweet chili sauce. Pour over fish — cod, salmon, halibut. Cover and bake. Serve with rice.
