Quick marinated asparagus and red peppers

For the final launch of the Space Shuttle Discovery, we drove up to Titusville from Vero Beach in the morning and hung out on the waterfront until the actual launch at 4:53 pm. It’s a good thing that we brought mostly healthy snacks, like veggies and dip and strawberries, instead of chips. That’s because most of what we did all day was people-watch and munch!

This was the most delicious dish in the picnic bag that day. The reason it’s quick is because the vegetables are cooked in the marinade, rather than steamed in water and marinated afterwards.

1 lb fresh asparagus
1 large red pepper
1/2 C seasoned rice vinegar
1/2 C water
2 T tamari soy sauce
2 T sesame oil (or 1 T ginger oil and 1 T sesame oil)
Sesame seeds

Steam the asparagus and pepper in the marinade until tender. Sprinkle with sesame seeds and eat warm or cold.
