Salmon Cucumber Seaweed Salad

This Asian-influenced salad is so awesome…I could eat the whole thing by myself, even though it makes two servings. It would be good on a sandwich, or over rice, too.

2 T dried wakame
1 7-oz package salmon
1 cucumber
1 T finely minced onion
2 T mayonnaise
1 t sesame oil
1 T miso
1 T tamari
Sesame seeds to garnish, optional

Soak the wakame until softened and drain well. Seed the cucumber and dice fine or grate. Combine all ingredients and garnish with sesame seeds.
