Salmonberry Liqueur

1 gallon salmonberries
Brandy
100 proof vodka or 151 grain alcohol
Crush the berries with your hands and place in a glass or ceramic bowl. Add 750 ml brandy. Let sit for one week, stirring daily. Strain with cheesecloth or a wire strainer. Let sit in the strainer, but don’t squeeze or press it (if you do, it will be cloudy). Filter it through three coffee filters.

You’ll end up with about 3 pints. The alcohol content will about half that of the brandy. Add 6-8 oz vodka, to taste, and let age 3 months. This will keep for several years but loses its fresh berry character as it smoothes.
