Sand Tarts (Rollouts)

There’s a dark brown knot on the wooden board the family uses to roll these out. If you can’t see the knot through the dough, then you haven’t rolled it thinly enough. If you roll them thinly enough, this recipe can make several hundred cookies.

This recipe might also work for making cookie cups, which you can fill with all kinds of yummy things.

Sift together:
4 C sifted flour
1/2 t baking soda
1/4 t salt

Cream together:
1 C butter
2 C sugar

Add 3 eggs, one at a time, beat well. Blend in 1 t vanilla and sifted dry ingredients. Cover bowl and chill several hours or overnight. Roll thin, cut and decorate.

Bake on lightly greased tins 8 to 10 minutes at 350 F.

Comments on the card say “Very Good” and “From Nanny Bowers.”
