1-1/2 C flour (whole wheat)
1 t baking powder
1/2 t baking soda
1/2 t salt
2 T sugar
1/2 C shortening
1-1/2 C cornflakes, crushed to 1/2 C
3/4 C buttermilk
1. Stir together first 5 ingredients. Cut in shortening until mixture resembles coarse crumbs. Add cereal and milk. Spread dough evenly in greased flat pan.
2. Bake at 450 F – 20 minutes or until lightly browned.
To serve, bury a piece of shortcake under a mound of sweetened sliced strawberries and fresh whipped cream. This is heavenly as a “midnight” snack at about 3 am. Don’t ask how I know.
