Spinach Souffle

As far as I’m concerned, this was the winning recipe at the Beaufort Backstreet Pub’s first (hopefully annual) Meatloaf Off. It’s totally creamy and decadent and rich, and you can easily double or triple it for a huge group. Many thanks to Denise for sharing the recipe!

3 eggs
16 oz small curd cottage cheese
1/4 pound white American cheese, grated or diced
1/4 pound butter, diced
2 packages chopped frozen spinach, thawed and squeezed
Salt and pepper

Combine ingredients, pour into casserole dish, and bake for 40 minutes at 350 F.
