Sween -n- Sour Cabbage Soup

1 small head cabbage, quartered and cut in 1/2 inch wide strips
1 medium onion, quartered and cut in 1/2 inch wide strips
2 cloves of garlic, minced
1 T olive oil
1 quart tomato juice
1/4 C tomato paste
Enough water to cover vegetables by 2 inches
1-1/2 t oregano
1 bay leaf
Black pepper to taste
Juice of 1 large lemon
1 T honey or to taste

Saute onions and garlic in olive until just transparent. Add cabbage and stir until hot. Add all ingredients except lemon and honey. Simmer about 30 minutes until cabbage is soft. Add lemon and honey, simmer about 5 more minutes.
