Thai lemongrass martini

Serves 2
2 stalks of lemongrass
1 C water
1 T lemon juice
2 oz good quality vodka
1 oz apple vodka or liqueur
1 oz coconut rum
1 Granny Smith apple
Slice 1/2 C of lemongrass and put it in a saucepan with the water. Bring to a boil and simmer for about 5 minutes to make lemongrass tea.
Chop about a quarter of the apple and put it in a cocktail shaker. Muddle it with the vodka. Add ice, lemon juice, apple liqueur, rum, and a couple ounces of the lemongrass tea. Shake well. Strain and serve with a piece of lemongrass and a slice of Granny Smith apple.
