Vegan Tofu Cheese Cubes

This is a good appetizer or snack, or use the cubes in Indian Saag Paneer.

12 oz firm tofu
2 t agar powder
1/4 C water
1 t sugar
2 T extra-light olive oil
1-1/2 t salt
3 T fresh lemon juice

Crumble the tofu. In a food processor, blend the tofu, agar, water, sugar, and oil until smooth. Place in a saucepan and stir over medium heat until it thickens. Remove from heat and stir in the lemon juice and salt. Pour into a jelly roll pan and chill until firm. Cut into cubes.
