Watermelon Sparkler

Yield: 6 small salad servings or 2 big smoothies

This came from a Mollie Katzen cookbook. But when I had a wisdom tooth removed, I tossed the leftovers in the blender to make a smoothie. It was even better that way.

4 C watermelon cubes (remove seeds)
1 C jicama, diced
3 T fresh lime juice
3 T crystallized ginger, minced (or substitute grated fresh ginger and a little sugar)

Mix ingredients and chill for an hour or more.
